To put the material into a very hot pan over high heat and turn over and over until done. Stir -frying is a very quick process. So, it is advisable to prepare all of the sauces in advance, included the corn flour (cornstarch) and water used to thicken the final sauce. When several kinds of ingredients are used in cooking, the difference in tenderness of each ingredient will somtimes require that material to be cooked in oil, boiled or fried before mixing whichever method is used, the ingredient must be precooked till tender. To cook food on each side until golden, in a little bit of oil.
When the preliminary preparation is finished, heat the pan and pour in oil. Add the onion, ginger or garlic and stir so that the oil will pick up its flavor. Then add the ingredients, with a few drops of wine, if desired, to enchance the flavor of the food. Add the sauce and stir-fry until all is mixed together. This entire process must be short and quick so that the food will not overcook.
