Ingredients

250 g self raising flour, sifted
250 g butter
185 g caster sugar and a pinch of salt
4 eggs
2 dsp grated rind of 1 lemon
2 dsp lemon juice mixed with 2 dsp undiluted evaporated milk

Method
Grease cake thin with butter, lining base with buttered brown paper. In cake bowl beat butter till light and then add sugar gradually, beating together till light and fluffy. Add eggs, one at a time, beating mixture well after each addition. Add lemon rind. Fold in flour, a little at a time, alternating with lemon juice and milk mixture, and ending with flour. Spoon batter into cake tin and bake in moderately hot oven 190 C for 1 hour, or 10 minutes longer till cake is baked and edges leave tin.
