Apricot Roll

Ingredients
250g (8oz) dried apricots
1 cup honey
60g (2oz) butter or substitute
3tbsp skim milk
desiccated account
caster sugar

Method
Pour enough boiling water over apricots to cover, let stand for 1 hour, drain and reserve 1/2 cup of the liquid. Put apricots, reserved liquid, honey and butter in saucepan. Stir over low heat until butter has melted and mixture has combined. Increase heat, bring to boil, reduce heat simmer stirring frequently, approx 20-25 minutes. or until thick. Add skim milk, combine well. Put mixture into blender, and blend until smooth, or push the mixture through a sieve. Refrigerate until mixture is cold. Divide mixture into two, roll each into a log, roll in combined coconut and sugar. Wrap in aluminum foil, refrigerate until firm, and cut into slices just before serving.
