Steamed Cod Steak (4 American servings /8 Chinese servings)
6 dried Chinese mushrooms
2 pounds cod steaks, 1 1/2 to 2
inches thick (or other firm
whitefish)
1/2 teaspoon salt
2 slices fresh ginger root, minced
2 tablespoons soy sauce
1 tablespoon oil
Method
Soak the mushrooms in warm water for 20 minutes. Squeeze dry, remove stalks and leave caps whole. Place fish and mushroom caps in a shallow heatproof dish and sprinkle with salt. Combine ginger root with soy sauce and oil. Sprinkle over fish. Place fish in a steamer and steam for about 15 minutes. Remove from steamer and serve immediately.
