Ingredients
6 level tbsps currants, chopped into smaller pieces
1 egg, beaten
Vanilla
1/2 metric cups plain flour
Pinch of salt and bicarbonate of soda
1/2 metric cup shortening (available in tins from supermarkets)
1 tbsp cold water
1/2 metric cup sugar
Method
Combine all ingredients and mix Keep dough in the refrigerator for hours. Take dough out of the fridge roll dough out onto a floured board 1 1/2 cm thickness. Cut dough into with fancy biscuit cutters. Bake on a lightly greased and lined tray at 1 till golden brown. Cool cookies wed’ a wire rack before storing in air jars.
