			<content:encoded><![CDATA[<p>These beans are very productive and provide a useful crop for the freezer. It is important they should not be shredded finely for freezing, or the cooked result will be pulpy and tasteless. Only tender young beans without strings should be frozen. Best  varieties for freezing : Carter&#8217;s Streamline; Carter;s White Monarch</p>
<p>Growing Runner beans will grow in most soils, but need liberal watering as dry soil will cause them to drop their flowers and the pods will not set. The beans should be<span id="more-953"></span> staked, and it is advisable to put in stakes before sowing as the roots of the beans are very brittle. Liberal watering is essential during growth, and mulching with well rotted manure is helpful. Tops should be taken off plants when they have climbed the stakes to make the plants more productive; also large pods should be removed every day or the plants will cease bearing.</p>
<p>Freezing Cut beans in pieces, not shreds. Blanch for 2 minutes, cool and pack in polythene bags. To cook, put in boiling water for 7 minutes. Storage time : 1 year.</p>

			<content:encoded><![CDATA[<p>Broad beans for freezing should be small and young, with tender outer skins, and it is best to plant a variety recommended for good flavour. Best varieties for freezing: Carter&#8217;s Green Leviathan; Green Longpod.</p>
<p>Growing Broad beans do best in rich ground. In mild areas, the seed can be planted in the early winter on a dry day when the ground is well broken up; some protecting during cold spells is advisable. Broad beans need good hoeing during growing, and <span id="more-921"></span>careful attention should be paid to black fly. As soon as the first flowers set, the tops should be prinched out to ensure an early crop; nipping off side shoots will strenghten the plants. Freezing Remove broad beans from shells, blanch 1 1/2 minutes and pack in cartons or polythene bags. To Cook put in boiling salted water for 8 minutes. Strorage time: 1 year.</p>

Select firm, unwrinkled fruit with a deep colour and avoid any with blemishes or a greenish tinge. Apricots are also available dried, either whole, halved or in chunks. They are a good source of beta carotene, potassium and dietery fibre. Look for unsulphured dried apricots and Hunza apricots, which are not treated with sulphur dioxide. <span id="more-900"></span></p>
<p>Preparation: apricots can be eaten fresh, or cooked and pureed. Dried apricots can be chopped and eaten dry, or soaked overnight in fruit juice or water and then used like fresh apricots.</p>

<p>1 1/2 cups red wine claret or burgundy<br />
3 slices of lemon<br />
3 cloves<br />
1/2 cup white sugar<br />
5cm (2in) piece cinnamon bark<br />
6 medium, firm pears</p>
<p><strong><em>Method </em></strong></p>
<p>Place wine, lemon, cloves, cinnamon and sugar in a saucepan. When boilling, add peeled pears and simmer for 10  minutes. Remove pears to a bowl and continue to boil the wine for 10 hot wine over pears and allow to stand until warm, turn fruit often. Serve with ice-cream.</p>

			<content:encoded><![CDATA[<p><strong>Ingredients</strong><br />
<strong><em>Crepe Batter</em></strong><br />
1 metric cup plain sifted flour Salt and nutmeg<br />
3/4 metric cup evaporated milk<br />
1/2 metric cup water<br />
3 eggs<br />
Dash of rum and maraschino brandy<span id="more-790"></span><br />
4 to 6 tbsps butter<br />
8 bananas (Pisang Raja) — peel Golden syrup<br />
1/2 tsp vanilla</p>
<p><strong>Method</strong><br />
In a bowl, put flour, salt and nutmeg. Make a well in centre, break eggs into well, add half the milk and stir, drawing the flour into the liquid. Mix well. Add rest of milk and water and beat till smooth. Add vanilla. Leave to stand before frying. Make 8 crepes piling them on top of each other with greaseproof paper in between. Cover to keep warm.</p>
<p>Put bananas in pan, dot with butter and grill till golden. Put a banana in each crepe and roll. Gently grill banana filled crepes. Serve hot with golden syrup and spirit poured on top.</p>

Fry garlic and onion in butter. Stir in bay leaves, adding tomato, water, spices. and stock cubes. Bring to boil. Stir in the ham. Stir in milk and garnish with parsley. Serve hot.</p>
