			<content:encoded><![CDATA[<p>The Menus we have suggested here are those we would choose in our favourite Chinese Restaurant, Fu Tong. The dishes &#8220;go together&#8221; as it were. But anyone can make just as suitable selections.</p>
<p>As in any other menu planning, one would avoid having two similar important dishes at the one meal. Further, one would be unlikely to serve two pork dishes at the one meal though, strangely enough, two chicken dishes can appear.</p>

Combine all ingredients and mix Keep dough in the refrigerator for hours. Take dough out of the fridge roll dough out onto a floured board 1 1/2 cm thickness. Cut dough into with fancy biscuit cutters. Bake on a lightly greased and lined tray at 1 till golden brown. Cool cookies wed&#8217; a wire rack before storing in air jars.</p>

<p><em><strong>Ingredients</strong></em></p>
<p>150g butter or margarine<br />
1 tsp liquid sweetening (equal to 5 tbsp sugar)<br />
1 1/4 metric cups wheat flour<br />
5 tbsp dessiccated coconut</p>
<p><strong>Topping<br />
</strong>egg<br />
desiccated coconut</p>
<p><strong>Method</strong><strong><br />
</strong>Cream the fat. Add liquid sweetening, coconut and wheat flour. Stir until well mixed. Roll into two bars about 4 cm in diameter. Chill. Cut the bars into 3/4 cm thick slices, brush with egg and dip into the desiccated coconut. Bake at 175 degrees C for 12-15 minutes until golden brown.</p>

1 1/2 level tsp baking powder<br />
300 g sugar<br />

Method</strong><br />
Sift salt with baking powder into flour. Cream butter and sugar till<br />
light. Add egg. Gently fold in flour using metal spoon. Pipe out dough through a star-shaped nozzle through an icing pump onto a greased and lined tray. Decorate with cherry pieces and bake in oven of 165° for 22-25 minutes or till brown.</p>

			<content:encoded><![CDATA[<p><strong>Steamed Cod Steak</strong> (4 American servings /8 Chinese servings)<br />
6 dried Chinese mushrooms<br />
2 pounds cod steaks, 1 1/2 to 2<br />
inches thick (or other firm<br />
whitefish)<br />
1/2 teaspoon salt<span id="more-918"></span><br />
2 slices fresh ginger root, minced<br />
2 tablespoons soy sauce<br />
1 tablespoon oil</p>
<p><strong>Method</strong><br />
Soak the mushrooms in warm water for 20 minutes. Squeeze dry, remove stalks and leave caps whole. Place fish and mushroom caps in a shallow heatproof dish and sprinkle with salt. Combine ginger root with soy sauce and oil. Sprinkle over fish. Place fish in a steamer and steam for about 15 minutes. Remove from steamer and serve immediately.</p>

Compared to more common varieties, alpine strawberries are very small and have a pointed shape. Although sweet and aromatic, they are not very juicy and they are not usually grown commercially.</p>
<p>Preparation: alpine strawberries are relatively unusual and so are best enjoyed whole and fresh.</p>
<p>Uses: small ones may be used as decoration or served in individual pastry tartlets.</p>
<p><strong>Amaranth</strong>- The large, nutritious seed of a decorative, ornamental plant of the pigweed family. Amaranth is available as a seed, flour (see amaranth flour) or as puffed seeds from specialist outlet. It is gluten free and high in protein.</p>
<p>Preparation: the seeds may be cooked in boiling water as you would a grain.</p>
<p>Uses: puffed amaranth may be used as a breakfast cereal.<span id="more-863"></span></p>
<p><strong>Amaranth Flour</strong>-A gluten free flour derived from ground amarant seeds. It is richer in protein, iron and calcium than wheat flour, and is available from some health food shops or from specialist mail order outlets.</p>
<p>Uses: it can be used on its own, or mixed with other flours to make breads, baked goods and pastry.</p>

Good supplies are now available in many greengrocers, and aubergines are worth freezing to serve as a vegetable or to add to recipes. The aubergines should be medium-sized and mature, with tender seeds or the results may be rubbery in texture. The auberigines should be peeled and cut into 1 inch slices, blanched 4 minutes, then chilled and dried on absorbent paper. The slices should be packed in cartons, with the layers separated by Cellphane. To cook plunge into boiling water 5 <span id="more-856"></span>minutes. Storage time: 1 year.</p>
<p>For short term storage, aubergines may be cooked before freezing. The peeled slices should be coate in thin batter, or egg and breadcrumbs, then fried in deep fat, well drained and cooled and packed in cartons in layers separated by Cellphane. For serving, they can be heated in a slow oven, or part thawed and deep fried. Do not store longer than 1 month.</p>
