Chinese New Years Cookies Recipes

Coconut Cookies

Ingredients

150g butter or margarine
1 tsp liquid sweetening (equal to 5 tbsp sugar)
1 1/4 metric cups wheat flour
5 tbsp dessiccated coconut

Topping
egg
desiccated coconut

Method
Cream the fat. Add liquid sweetening, coconut and wheat flour. Stir until well mixed. Roll into two bars about 4 cm in diameter. Chill. Cut the bars into 3/4 cm thick slices, brush with egg and dip into the desiccated coconut. Bake at 175 degrees C for 12-15 minutes until golden brown.

Sunflower Munchies

Ingredients
125g (4oz) sunflower seeds
125g (4oz) dried apricots
125g (4oz) dates
1 cup water
60g (2 oz) butter or substitute
1 cup honey
1 cup desiccated coconut

Method

Hazelnut Sesame Candy

Ingredients

125g (4oz) butter or substitute
1 cup honey
250g (8oz) sesame seeds
125g (4oz) sultanas
125g (4oz) hazelnuts

Methods

Apricot Roll

Ingredients
250g (8oz) dried apricots
1 cup honey
60g (2oz) butter or substitute
3tbsp skim milk
desiccated account
caster sugar

Cream Style Corn Butter Cake

250 g self raising flour sifted with 1/2 tsp baking powder
185g butter or margarine
185g caster sugar
4 eggs, beaten
1 cup cream style corn (tinned)
1 tsp vanilla essence

Method
Cream butter and sugar till light and fluffy. Add beaten eggs, a little at a time, beating after each addition. When mixture is well and creamy, add the corn, beating it well into the mixture. Add vanilla and then flour, a little at a time, folding it into the mixture. (If using an electric mixer, use a lower speed at this stage)

Pour cake batter into a greased cake tin, the base of which has been lined with paper. Bake in moderately hot oven, 190C (375F) for an hour or a few minutes longer till cake is cooked.

To test: (Pierce center of cake with thin metal skewer, if it comes out clean, cake is cooked)
