			<content:encoded><![CDATA[<p><strong>Apple Juice &#8211; </strong>may be frozen, but should not be sweetened as fermentation sets in quickly. It is best made in the proportion of 1/2 pint water to 2 Ib apples or it can be made by simmering leftover peelings in water. The juice should be strained through a jelly bag or cloth, and cooled completely before freezing. It may be frozen in a rigid container, leaving 1/2 in headspace or in a loaf tin or ice cube trays, the frozen blocks then being wrapped in foil or polythene for easy storage.</p>
<p><strong>Apple Sauce</strong> &#8211; Cook the apples to a pulp with a minimum of water. For the best flavour, this should be done in a casserole in the oven, using sluced but unpeeled apples. Sieve the sauce and sweeten to taste, adding a squeeze of lemon juice. Cool and pack into rigid containers, leaving 1/2 in headspace. Thaw for 3 hours at room temperature. Storage time : 1 year.</p>

125g (4oz) sunflower seeds<br />
125g (4oz) dried apricots<br />
125g (4oz) dates<br />
1 cup water<br />
60g (2 oz) butter or substitute<br />
1 cup honey<br />
1 cup desiccated coconut</p>
<p><em><strong>Method</strong></em><br />
Put sunflower seeds in baking dish into a moderate oven for about five minutes or until golden brown. Bring finely chopped apricots and water to boil in pan, reduce <span id="more-767"></span>heat and simmer covered until the apricots are tender. Remove lid, increase heat, boil uncovered until nearly all the liquid has evaporated. Add finely chopped dates, butter and honey and stir until well combined. Simmer for a further 8 minutes or until mixture is very thick, stirring occasionally. Put the apricot mixture into a bowl and refrigerate until set. Roll teaspoonful of the mixture into balls, then roll in the desiccated coconut and store in the refrigerator.</p>

Put sesame seeds in large frying pan. Stir over high heat until seeds turn golden brown, then remove the seeds from pan. Chop hazelnuts roughly. Stand butter and <span id="more-765"></span>honey in a large pan over low heat and bring to boil, and continue boiling for 5 minutes or until honey mixture is a dark golden color. Add sesame seeds, hazelnut and sultanas to pan, stir until combined. Pour into a greased and greased paper-lined shallow square cake tin. Allow to cool and cut into squares or rectangular slices. Cool in tin, and store in refrigerator.</p>

125g (4 oz) roasted peanuts<br />
250g (8oz) raisins</p>
<p><strong><em>Method</em></strong><em></em><br />
Combine honey, sugar, butter in saucepan, and stir over low heat until sugar has <span id="more-763"></span>dissolved. Increase the heat and boil gently for 20 minutes, stirring occasionally. Remove from heat, add peanuts and chopped raisins and mix well. Put teaspoonfuls of the mixture into paper patty cases and leave to set. Makes approx.</p>

<p><strong><em>Ingredients </em></strong><br />
250g (8oz) dried apricots<br />
1 cup honey<br />
60g (2oz) butter or substitute<br />
3tbsp skim milk<br />
desiccated account<br />
caster sugar</p>
<p><strong><em>Method</em></strong><em></em><br />
Pour enough boiling water over apricots to cover, let stand for 1 hour, drain and reserve 1/2 cup of the liquid. Put apricots, reserved liquid, honey and butter in <span id="more-760"></span>saucepan. Stir over low heat until butter has melted and mixture has combined. Increase heat, bring to boil, reduce heat simmer stirring frequently, approx 20-25 minutes. or until thick. Add skim milk, combine well. Put mixture into blender, and blend until smooth, or push the mixture through a sieve. Refrigerate until mixture is cold. Divide mixture into two, roll each into a log, roll in combined coconut and sugar. Wrap in aluminum foil, refrigerate until firm, and cut into slices just before serving.</p>

<p><em><strong>Ingredients</strong></em><br />
125g (4oz) butter or substitute<br />
1 cup honey<br />
125g (4oz) hazelnuts<br />
125g (4oz) unsalted peanuts<br />
125g (4oz) almonds<br />
125g (4oz) desiccated account</p>
<p><strong><em>Method</em></strong><em></em><br />
Chop hazelnuts roughly. Put almonds and hazelnuts onto baking tray and place into a moderate oven for 3 minutes, or until the hazelnuts start turning golden brown. <span id="more-758"></span>Remove from oven and cool. Stir the coconut in a frying pan over low heat until golden brown, remove from heat immediately. Boil honey for 15 minutes until thick. Add hazelnuts, peanuts, almonds and coconut. Mix lightly. Pour onto a greased tray to cool. When cold, break into pieces.</p>
