PAPRIKA PORK RECIPE

Ingredients
500-600 g lean pork shoulder
1 tsp paprika powder
50 g butter 3-4 tomatoes
1-2 tbsp butter for frying
salt
250 ml dry, white wine
‘/2- 1 tsp oregano

Mixed Vegetable Dish

Ingredients

  • 2 large carrots (skinned halved and cut coarsely and diagonally into slices)
  • 2 cups cauliflower pieces
  • 2 cups french beans (cut into 3cm lengths)
  • 1 cup snow peas
  • 1 cup young sweet corn spears (tinned)
  • 6 or 8 wedges of red and green peppers with seeds and pulp removed
  • 15 dried black mushrooms,washed and soaked in hot water
  • 4 clovers garlic, finely chopped
  • 4 thin slices of ginger
  • 3 tbsp vegetables oil
  • salt
  • pepper
  • 1 dsp corn flour
  • 1 dsp light soy sauce
  • 1 dsp cold water mixed together

Method

First prepare the mushrooms and remove stalks. Heat 1 dsp, vegetable oil in saucepan, add mushrooms, fry a little and then add 1/2 cup water and a little salt. Cover pan and cook on medium heat for about half an hour to soften the mushrooms. Set aside.

Fried Shrimps in Oyster Sauce Recipe

Ingredients

  • 600 g large shrimps
  • 4 tbsp pork lard
  • 2 tbsp sesame oil
  • 5 chilies (split in half)
  • 1 clove garlic (chopped)
  • 4 tbsp oyster sauce
  • 1 tbsp Chinese rice wine
  • 2 tsp corn flour
  • 1 tbsp black soy sauce
  • sugar
  • pepper

Garnish: 2 cm lengths spring onions and Chinese parsley

Pearl Barley Duck Soup Recipe

Ingredients

  • 2 kg duckling, quartered
  • 20 small red onions
  • 1/2 nutmeg, shelled
  • 3 tbsp pearl barley
  • 1 chicken stock cube
  • 2 litres water
  • 20 dried red dates (Hong chor)
  • salt
  • pepper

Garnish: 10 shallots (sliced and Fried)

Braised Pig’s Trotters with Sea Cucumber Recipe

  • 1 1/2 kg pigs trotters (cut into serving pieces)
  • 300 g sea cucumber (soaked in water, cut into 4cm lengths)
  • 4 tbsp oil
  • 150 g young root ginger (sliced thinly)
  • salt
  • pepper
  • 30 g piece rock sugar
  • 2 cloves garlic (crushed)
  • 2 tbsp dark soy sauce
  • 6 tbsp light soy sauce
  • 2 litres water

Fried Sharksfin

Ingredients

  • 60 g sharksfin (soaked in water 10 minutes)
  • 2 tbsp brandy
  • 150 g crabmeat
  • 8 tbsp pork lard
  • 1 tbsp sesame oil
  • salt
  • pepper
  • mustard to taste
  • 5 eggs,beaten
  • 2 tsp corn flour
  • 3 clovers garlic, chopped
  • 6 tbsp water
  • 4 tsp fish sauce

Garnish: Chopped spring onion and Chinese celery.

Waxed Duck and Chinese Sausage Rice Recipe

Ingredients

  • 600 g long grain rice (washed and drained)
  • 150 g Chinese sausage sliced diagonally to 1 cm thick pieces
  • 300 g waxed duck (cut in small pieces)
  • 1 chicken stock cube
  • Water to cook rice
  • 2 cm young root ginger (cut into julienne strips)
  • 1 clove garlic (crushed)
  • 6 tbsp sesame oil
  • 2 tbsp cooking oil

Garnish: Fried sliced shallots, Chinese celery, slices of red chili.

Stuffed Vegetables

Ingredients

  • 3 large peppers or 8 small ones
  • 1 pimiento
  • 1 large onion
  • 1/2 litre sweet corn
  • garlic
  • 100 g long grain rice
  • 1 egg
  • 250 minced meat, half beef half lamb
  • freshly milled pepper
  • salt
  • 1 clove
  • 1/2 bunch parsley
  • 1 sauce boat of tomato sauce with white wine
  • 5 tbsps olive or groundnut oil

Method

Cut the onion in half horizontally and carefully remove the skin from each half. Cut the peppers in two lengthways, remove the seeds and blanch the peppers in boiling water with some salt added and the onion skin, for two minutes. Drian and place in an oiled dish. (more…)
